Sweet Potato Chips - 3 ways

Good Morning, I hope this finds you all well. All six of us LOVE sweet potato and often on movie nights I make some ‘chips’ for us to snack on … I have been playing around with a few different flavours and have 3 favourites to share with you. So tasty just to snack on as is – warm or cold – or throw them into a salad. I hope you enjoy them as much as we do!

Salt and Vinegar
Ingredients
1kg sweet potato – cut into even pieces
1 tblspn olive oil
60 mls apple cider vinegar
1 tblspn salt
Method
Preheat oven to 180c and line a large tray with baking paper.
Lay down the sweet potato and sprinkle evenly with the oil, HALF the vinegar and HALF the salt. Cook for 20 minutes, then turn the sweet potato. Increase heat on oven to 200c and sprinkle with the remaining vinegar and salt. Cook for a further 20-30 minutes or until cooked to your liking.

Cheesy Rosemary
Ingredients
1kg sweet potato – cut into even pieces
2 tblspns dried rosemary
2 tblspns olive oil
pinch salt
¼ cup nutritional yeast
Method
Preheat oven to 180c and line a large tray with baking paper.
Lay down the sweet potato and sprinkle with rosemary and salt. Drizzle with the oil.
Cook for 20 minutes, then turn the sweet potato. Increase heat on oven to 200c and sprinkle with the nutritional yeast. Cook for a further 20-30 minutes or until cooked to your liking.

Sesame and Cayenne
Ingredients
1kg sweet potato – cut into even pieces
1/3 cup sesame seeds
2 tblspns coconut oil
1 tspn cayenne pepper
½ tspn salt
Method
Preheat oven to 180c and line a large tray with baking paper.
Lay down the sweet potato and sprinkle with the rest of the ingredients.
Cook for 20 minutes, then turn the sweet potato. Increase heat on oven to 200c and cook for a further 20-30 minutes or until cooked to your liking.
