Slow Cooker Lasagne (Vegetarian)

Good Afternoon friends, I hope this finds you well. As promised, here is a new and exciting recipe (let’s just say I did a happy dance in the kitchen when it turned out for the first time, as I LOVE slow cooking meals!). Silverbeet and Mushroom Slow Cooked Lasagne! I have made it a couple of times now and it’s a huge hit with my family, even for Miss 9 who REALLY doesn’t like mushrooms! I hope you love it as much as my family does.
Ingredients
700ml passata
16 -20 button mushrooms – roughly sliced
1 large bunch silverbeet – shredded into 2-3cm pieces
375g ricotta
200-250g sliced cheese
250g lasagne sheets (dry)
1 tblspn dried rosemary leaves
1 tblspn dried thyme leaves
1 tblspn dried parsley leaves
1 tblspn garlic granules
good pinch salt and pepper
paprika (to sprinkle on top optional)
Method
Place layers of the ingredients into the slow cooker in the following order:
- 1/3 of the passata
- 1 layer lasagne sheets
- half the amount of silverbeet, mushrooms, herbs, garlic
- 1/3 of the passata
- ricotta (use the entire amount – I place teaspoon size dollops around the entire lasagne as I find this difficult to spread)
- 1 layer of cheese
- 1 layer lasagne sheets
- the remaining half of the silverbeet, mushrooms, herbs and garlic
- salt and pepper
- the remaining 1/3 of passata
- 1 layer lasagne sheets
- 1 layer of cheese
- Sprinkle with Paprika (optional)
Cook on LOW heat for 4 hours (or until the pasta sheets are completely cooked).
Notes
- my slow cooker is a 7L Breville (not sponsored!) rectangle size that would hold 2 x whole roast chickens next to each other – if your slow cooker is a different size to this, you may need to adjust the time cooked and quantity of ingredients
- you can use grated cheese if you prefer but be aware that store bought grated cheese has additives to prevent it from sticking together
- this is a basic mushroom and silverbeet lasagne, you can add more vegetables eg grated carrot and zucchini depending on your preferences
- you can make this gluten free by buying gluten free lasagne sheets
