Peanut Butter Balls

by Collette White | August 10, 2015

Good Morning! Only a couple of weeks ago I went and grabbed a coffee with a friend and we bought a ‘Peanut Butter Ball’ each – we both loved it so much that I had to come home and make my own version! They are SO amazingly delicious and addictive and this recipe makes a fair few for you to enjoy which is good as you probably won’t be able to stop at eating just one … don’t say I didn’t warn you!

2 cups brazil nuts (390g)

6 medjool dates – seeds removed (120g)

1 cup peanut butter (340g)

½ cup desiccated coconut (45g)

3 tblspns maple syrup (40g)

1 heaped tspn coconut oil (solid)

good pinch salt

In a large food processor place the brazil nuts and dates and blitz on a medium – high speed until combined.

TMX: Speed 7 / 10 seconds

Add the rest of the ingredients to the brazil nut mixture and blitz again on medium – high speed until a sticky paste is formed (you might need to scrape the sides down a few times during this process).

TMX: Speed 5 / 30 seconds. Scrape down sides and repeat this speed and time 2-3 times.

Roll mixture into heaped tablespoon size balls. Makes approximately 40. Store in an airtight container in the fridge.

You can swap brazil nuts for other nuts of choice. Almonds or Macadamias would be my next choice.

Wishing you a truly wonderful week ahead! I look forward to connecting with you more again soon.
