Peanut and Caramel Slice

Good Morning friends! I hope this finds you all well. Can you believe it’s the last day of January!? I went to make my SUPER popular ‘Nutty Salty Caramel Squares’ the other day but decided to change it up a bit and this is what I came up with. It is different to that slice but equally as delicious, I am certain you will love it. Please let me know! 

Ingredients

BASE

1 ½ cups cashews (230g)

½ cup shredded coconut (35g)

10 medjool dates – seeds removed (190g)

3 tblspns chia seeds (35g)

3 tblspns cacao (20g)

1 tspn vanilla essence (5g)

good pinch salt

MIDDLE

½ cup peanut butter (120g)

½ cup coconut cream (110g)

8 medjool dates – seeds removed

2 tblspns coconut oil – 40g

1 tspn vanilla essence (5g)

NUT LAYER

1 heaped cup roasted peanuts

extra good pinch salt

TOP

½ cup coconut cream (110g)

1/3 cup coconut oil (80g)

¼ cup peanut butter (60g)

¼ cup cacao (25g)

1 tspn vanilla essence (5g)

extra good pinch salt

Method

Line a 20cm x 20cm square cake tin and set aside.

Place all the ingredients for the ‘base’ into a food processor and blend on medium – high speed until thoroughly combined and sticky.

TMX: Speed 8 / 45 seconds

Place this base mixture into the prepared tin and push down firmly to form the base of the slice.

Place slice in the fridge whilst preparing the next step.

Place all the ingredients for the ‘middle’ into a food processor and blend on medium – high speed until thoroughly combined. You may need to scrape down the sides a few times during this process.  

TMX: Speed 8 / 8 seconds. Scrape sides.

Speed 5 / 15 seconds. Scrape sides.

Speed 5 / 20 seconds.

Place this ‘middle’ mixture into the prepared tin and spread out evenly but firmly. Top with ‘nut layer’ – firmly push down peanuts and sprinkle generously with salt.

Lastly, place all the ingredients for the ‘top’ into the food processor and blitz on a medium speed for approximately 30 seconds until reasonably smooth.

Spread evenly over the slice and sprinkle with salt.

Freeze for at least two hours before cutting into squares and enjoying. Store in the fridge.
