Mexican Chicken and Wild Rice Soup

Good Afternoon friends and Happy 1st day of Winter! I hope this finds you all well. Although the sun is shining through my front window making everything gloriously warm and it doesn’t feel like Winter at the moment, our mornings and evenings are sure getting fresh! If you know me at all, you would know that I LOVE Slow Cooking and I love feeding my family food that comforts … and this recipe ticks both of those boxes plus, of course, it is super delicious. I hope you love it as much as they do, please let me know! 


800g-1kg chicken breast fillets – roughly diced

1 cup wild rice

1 red capsicum – finely diced

1 green capsicum – finely diced

1 red onion – finely diced

3 cloves garlic – crushed or grated

400g tin black beans – drain and rinse well

400g tin red kidney beans – drain and rinse well

400g tin corn – drain

680ml jar passata

6 cups chicken broth or stock

1 tblspn cumin powder

1 tblspn coriander powder

1 tblspn paprika

1 tblspn dried parsley leaves

½ tblspn turmeric powder

½ tspn cinnamon

extra good pinch salt and pepper

Optional – to serve

Fresh coriander

Sour cream

Chilli sauce


Prepare all ingredients as listed.

Place all ingredients (except for the optional ingredients) into your slow cooker and gently mix.

Cook on low heat for 7-8 hours.

Once cooked, ensure all the chicken is broken down and no longer in chunks. If it isn’t, gently shred the chicken pieces using 2 forks to pull it apart.

Serve topped with fresh coriander, sour cream and chilli sauce.

Serves 6-8


  • If everyone in your family likes chilli, you can add fresh chilli or chilli flakes to the meal at the same time as the rest of the ingredients – as not everyone in my family likes it, I choose to add a chilli sauce to individual serves at the end
  • For a Vegetarian option – omit the chicken and increase the black beans, red kidney beans and corn to two tins of each instead of only one tin
  • This feeds my hubby and 3 of my children generous portions for dinner PLUS leaving enough for all 4 of them to have decent size portions for lunches the next day
  • Freezes well
