Marinated Cannellini Bean Salad

Good Morning friends! I hope this finds you all well. Here is a super delicious and easy little marinated salad for you. It’s perfect to eat for lunch by itself, on toast and avocado, on rice, quinoa, cous cous, or of course as a side dish. There are so many ways for you to enjoy this! I hope you love it as much as my family did!

Ingredients

2 x 400g tins cannellini beans

250g semi dried tomatoes – roughly cut

½ bunch flat leaf parsley – roughly shredded

3 tblspns fresh lemon juice

3 tblspns oil of choice * see notes

2 cloves garlic – crushed

rind of 1 large lemon (2 tblspns)

extra good pinch salt

Method

Drain the cannellini beans and rinse them well.

Place all ingredients, including the cannellini beans, into a container (preferably one with a lid).

Mix thoroughly and set aside at room temp for 30 minutes before refrigerating for at least 2 hours – overnight is best if time allows.

Serve and enjoy!

Notes

 

  • Swap ‘oil of choice’ for oil that comes with the semi dried tomatoes
