Lasagne Soup

Good Afternoon friends, I hope this finds you well! As promised here is my ‘Lasagne Soup’ recipe! I was chatting to a friend a few weeks back about homemade Lasagne and she was saying that hers always falls apart and ends up being like soup and that she then found out that ‘Lasagne Soup’ IS actually a thing … of course I was SO keen to know more about that as my family LOVE Lasagne and anything similar to it. There are many versions around, I am not trying to ‘recreate the wheel’ – just my version testing and using flavours my family loves … I do hope you love it also … I would love to hear from you when you make it!
Ingredients
400mls sour cream
220g tasty cheese – grated
200g parmesan cheese – grated
1 tblspn oil of choice
600g beef mince
4 cloves garlic – crushed / grated
1 large brown onion – finely diced
1 tblspn dried parsley
1 tblspn dried basil
½ tblspn dried rosemary
½ tblspn dried thyme
extra good pinch salt and pepper
2 x 400g tins diced tomato
1200ml beef broth
500g lasagne noodles – broken into large pieces
Method
Place the sour cream, tasty cheese and parmesan cheese into a bowl, mix thoroughly and set aside until ready to serve.
In a large saucepan / soup pot, place the oil and mince and stir over a medium – high heat until browned and cooked. Carefully drain the excess oil from the pot.
Continuing on a medium heat, add the garlic, onion, herbs, salt and pepper and stir for 2 minutes or until the onions are fragrant and cooked, being careful not to burn them.
Add the tin tomatoes and broth, stir to combine then bring to the boil.
Once boiling, add the lasagne noodles, stir well and cook until the lasagne sheets are thoroughly cooked (follow the instructions on the box for the time to cook the pasta).
Once the lasagne sheets are cooked, serve straight away.
Serve with a dollop of sour cream and cheese mixture on top.

Notes
- To make this gluten free you can try and source gluten free lasagne sheets or gluten free pasta of choice
- To make this dairy free you can omit the cheese mixture on top or replace it with dairy free cheese of choice
