Good Morning friends! I hope this finds you all well. The cooler weather is certainly starting to kick in here in Tasmania (yesterday and today only reaching 9ºc!). Which means my slow cookers get an even bigger workout. I felt like making something hearty like a ‘goulash’ a few weeks ago and after a few attempts to get it ‘right’, I finally have the finished, tried and tested and incredibly loved recipe for you all to enjoy. I would love to hear from you when you make it, so be sure to let me know!

1kg potato – cut into large chunks
2 large red capsicum – cut into thin strips
1 medium eggplant – cut into thin strips
