Hearty Goulash

Good Morning friends! I hope this finds you all well. The cooler weather is certainly starting to kick in here in Tasmania (yesterday and today only reaching 9ºc!). Which means my slow cookers get an even bigger workout. I felt like making something hearty like a ‘goulash’ a few weeks ago and after a few attempts to get it ‘right’, I finally have the finished, tried and tested and incredibly loved recipe for you all to enjoy. Ingredients

1 1/2kg diced beef

1kg potato – cut into large chunks

2 large red capsicum – cut into thin strips

1 medium eggplant – cut into thin strips

1 brown onion – cut into thin strips

400g tin diced tomatoes

250ml beef broth or stock

3 tblspns paprika

2 tblspns dried parsley

2 tblspns tomato paste

1 tblspn apple cider vinegar

1 tblspn honey

4 cloves garlic – crushed or grated

extra good pinch salt and pepper

sour cream – to serve

fresh coriander or parsley – to serve

Method

Prepare all ingredients.

Place all ingredients, except for the sour cream and coriander, into the slow cooker and mix gently.

Cook on low heat for 8 hours.

Serve with a dollop of sour cream and sprinkle with coriander or parsley.

Enjoy!

  • Serve as is or serve with pasta of choice or rice
  • Serves 6+
