Chargrilled Corn Salad

Good Afternoon friends! I hope this finds you all well. Since getting my new ‘Richmond Belling’ Oven a few months ago ( we know her as Mabel 😉 ) I have fallen in love with the ‘griddle’, something I have never had on a previous oven. Chargrilling Vegetables is my favourite and hubby insists the griddle cooks the best steak ever. I have made this Chargrilled Corn Salad a few times over Summer and I thought I would share it with you. It is super easy with minimum ingredients and it’s lovely and fresh. I hope you love it as much as we do.
Ingredients
3 large cobs of corn
30 green beans – ends removed
1 cup frozen peas
dressing
4 tblspns oil of choice
4 tblspns lemon juice
1 tspn cumin powder
1 tspn coriander powder
good pinch salt
Method
Peel your corn and soak in water for 10-15 minutes. Pat dry and heat griddle on high.
Place the corn on the griddle and cook for approximately 15 minutes or until lovely and chargrilled, turning approximately every 2 minutes.
Meanwhile in a small saucepan, boil some water, and add the green beans and frozen peas. Cook for 2-3 minutes only, so they remain fresh and not overcooked and mushy.
Add all the dressing ingredients into a small jar and shake well.
Once all ingredients are cooked and ready, carefully cut the corn off the cob and place corn, beans and peas on a plate, drizzle with dressing and serve.
