Burrito Bowls

Good Morning friends! I hope this finds you all well. Another quick, easy, budget friendly and delicious recipe for you … it’s also great when you have guests or you are feeding a crowd. Burrito Bowls. Once again, similar to the Sweet Potato Stacks I posted a couple of days ago, there is no real ‘recipe’ for this. The options for what you can put in this meal are pretty long, it will just come down to your taste buds. As always, I hope you enjoy this as much as my family.
Ingredients
Mince (I normally do 1kg for the six of us and that doesn’t allow for large serves or leftovers, so personally I cater for 200g mince per person)
Spices for the mince – 1 tspn each of dried cumin, dried coriander, paprika – good pinch salt and pepper
Baby Spinach
Diced tomatoes
Tinned corn
Tinned chickpeas
Tinned black beans
Diced Spanish onion
Diced capsicum
Avocado
Corn Chips
Chilli or Sweet Chilli Sauce
Fresh coriander
Sour Cream **
Grated Cheese **
Brown Rice or Wild Rice – I especially cook this when feeding a crowd to bulk the dinner up and fill bellies easier
** if not dairy free, alternatively you can use any cheese you may eat eg I use sheep or goat cheese as I can not have cows cheese
Method
In a large fying pan or wok, place the mince and spices and cook thoroughly. You can add a little chilli flakes or chilli sauce to this mince mixture if you like at this stage.
Cook the rice, drain and set aside.
Prepare the remaining ingredients. I place all the ingredients in individual bowls and then on the kitchen bench.
Once the mince and rice is cooked, give everyone a bowl and they are ready to serve.
It is really as easy as that!
