Broccoli Salad with Creamy Avocado and Coriander Dressing

Good Evening friends! I hope this finds you all well and enjoying Summer. There are so many things to enjoy about warmer weather and Salads are one of them. This has become favourite here and I am super excited to share this easy recipe with you. I hope you enjoy it as much as we do. 

Ingredients

Broccoli Salad

500g broccoli – cut into small florets

1/8th large cabbage – finely shredded

2 red apples – cored and thinly sliced

2 long stalks celery – roughly sliced

½ spanish onion – thinly sliced

1 tin chickpeas – drained and washed well

¼ bunch coriander – roughly shredded

Creamy Avocado and Coriander dressing

1 large avocado

¾ bunch coriander (including stems)

½ cup hemp seed oil

½ cup water

juice of 1 lime (1/3 cup)

1 tblspn apple cider vinegar

extra good pinch salt and pepper

Method

Broccoli Salad

Prepare all ingredients as listed and place on a large platter or bowl.

Serve with Creamy Avocado and Coriander dressing.

Creamy Avocado and Coriander dressing

Add all ingredients into a blender or small food processor and blitz until smooth, thick and creamy.
