Good Afternoon friends! I hope this finds you all well … healthy … washing hands … and that you have plenty of toilet paper (wowza it is a bit crazy out there!)
I have been a little absent from here of late due to a *top secret* project I am working on! It’s taking up quite a few hours of my already full days, lucky I am enjoying it! I can’t wait to share it with you when I am able.
So I am here today to share with you my ‘breakfast bowls’ as promised. The past 8 or so weeks these have been a weekly meal, turns out, my family have requested Sunday night be our ‘Breakfast Bowl Night’! FUN!
It isn’t really a recipe as such … more a list of ingredients you pop together ha ha! It will all depend on how many bowls you are making and people you are feeding! Either way they are truly yummy and I hope you enjoy them as much as my family does!
Kale Chips (kale, olive oil and salt)
Avocado and chia seeds
Sauteed Mushrooms (mushrooms, butter, garlic and parsley)
Hash browns (you can make but I generally just buy them)
Herb Tomatoes (tomatoes, thyme, salt, pepper and oil)
Prep all ingredients:
- boil eggs
- cook hash browns
- make kale chips (cut kale thin, drizzle with oil and sprinkle with salt and bake in a large tray / dish in a hot oven for 10-12 minutes)
- make tomato (halve or quarter tomato, sprinkle with thyme, salt and pepper and drizzle a tiny bit of oil and cook on a tray / dish in a hot oven for 15-20 minutes)
- mushrooms (in a saucepan place all the ingredients, cook and stir on medium heat for 10-15 minutes until softened to your liking)
Once everything is prepped as needed – arrange all ingredients in shallow bowls and serve immediately.
If you don’t like smoked salmon you can swap this for fresh cooked salmon, tin salmon or bacon!
There are many options depending on your taste buds and personal preferences. Have fun making something a little different for dinner and enjoy!
For my family I generally use:
- 2 hash browns each
- 1 tomato each
- 1-2 eggs each
- 1 bunch kale
- 3 avocado
- 500g mushrooms
- 50g smoked salmon each (they would eat WAY more than this but with 5 eating it, 250g of smoked salmon is roughly $15ish so I try and limit it to this)
