Sweet Chilli Relish

Good Afternoon friends! I hope this finds you well. How are the school holidays treating you? My girls still have a few days left before they go back to school, we have had a heap of fun, full busy days and today we are having a much needed day at home! On Good Friday we had some friends over for lunch and they tried my homemade ‘Sweet Chilli Relish’ …. they LOVED it! YAY! I posted it a while ago on Fb but as we know things get lost there so I thought I would share it here also … it is a perfect recipe for those of you that have a chilli plant at home going out of control! Enjoy!
138 home grown small hot chillis (ha ha yes I counted them) – approx 700g
(my chillis were orange but any will do!)
2 cloves garlic
2cm x 2cm chunk ginger
1/4 cup apple cider vinegar
1 cup rapadura sugar
TMX VERSION: Place the chilli, onion, garlic and ginger into the bowl and chop on speed 6 for 10 seconds.
Add the apple cider vinegar and rapadura and cook for 20 minutes – 100c – speed 2.
ALTERNATE VERSION: Place the chilli, onion and ginger into a food processor and chop on medium – high speed for 30-40 seconds.
Add all the ingredients to a small saucepan and simmer on medium heat for approx. 20 minute until the desired consistency. Stir several times throughout this process to ensure it doesn’t burn.
Allow to cool slightly before storing in glass jars.
