Beef and Mushroom Stroganoff

Good Afternoon friends! I hope this finds you all well and for those of you that are on holidays (being the school holidays), you are enjoying yourself! All is well here, we are enjoying lazy mornings, cooking days and quality time together. On Sunday we went for a drive and had a play in our first Snow for the season – less than 10 minutes from our home! Beautiful!
I am here today to share with you my recipe for Beef Stroganoff. It is one of Hubby’s favourite meals but sadly I can’t enjoy it anymore as I am intolerant to mushrooms – such a pity as I use to love them so much when I was younger. This recipe is so easy to make, it uses so little ingredients and of course it’s gluten, dairy and preservative free! I hope you love it as much as my family does! PS my 7 1/2 year old twins truly dislike mushrooms but they ate this without comment or complaint! YAY!

Ingredients

1 tblspn oil of choice

2 brown onions – cut into thin wedges

4 cloves garlic – crushed or grated

1kg beef stir fry strips

16 button mushrooms – roughly sliced

good pinch salt and pepper

1 cup raw cashews

1 cup beef bone broth

2 tblspns lemon juice

Method

Place the oil, onion and garlic into a large fry pan or wok. Stir fry on a medium-high heat until the onion is translucent, 2-3 minutes, do not burn.

Add the beef, mushrooms, salt and pepper and stir fry over a medium heat until ¾ cooked.

Meanwhile place the cashews, bone broth and lemon juice into a food processor and blitz until smooth.

Add the cashew mixture to the beef and mushrooms and simmer on a medium – low heat until the meat is cooked.

Serve with rice or pasta and vegetables.
